Raspberry Thumbprint Cookies
Healthy eating doesn't mean you can't enjoy a treat now and then. These cookies are delicious, healthy and super easy to make.
Ingredients:
1 cup almond or oat flour
1/2 tsp baking soda
1/2 tsp salt
1/2 cup tahini
1/2 cup maple syrup or coconut sugar
1/2 tsp vanilla
1/2 cup of sesame seeds
1/2 cup raspberry jam
Preheat oven to 350 F
Mix dry ingredients
Mix tahini, syrup/sugar and vanilla
Combine dry and wet ingredients
Using a small ice cream scoop, form balls and roll in sesame seeds.
Place on a baking sheet lined with either parchment paper or silicone sheet, spacing about 2 inches apart.
Press down the centre of the cookie making a "thumbprint"
Bake for 8-10 minutes
Add 1 tsp of jam to centre of cookie.
